Uptown was thrilled to welcome the culinary team from Mowry & Cotton of The Phoenician Resort for a Chef Demonstration at the market in January! Mowry & Cotton is a newly-opened all-day restaurant within The Phoenician serving elevated, modern American eats (view menu here) & cocktails. The team arrived excited to share this new valley dining establishment with Uptown-goers!
The culinary team prepared to share a Local Citrus Salad, a mix of Oranges, Grapefruit, Medjool Dates, toasted Pistachios, Pomegranate seeds, Molasses and fresh Mint. The team found inspiration for this dish by sourcing seasonal, locally grown Organic Oranges, Grapefruit and dates from McClendon’s Select.
The students of Careers in Culinary Arts Program (C-CAP Arizona) worked alongside the culinary team to prep, assemble and share this colorful offering.
The C-CAP students sliced fresh citrus, dates and chopped mint while the culinary team carefully combined all ingredients for samples. Each sample packed a citric and sweet bite. Arizona is known for it’s award winning citrus during the Winter growing season, and this dish was a beautiful representation of our Winter food culture.
To complete the dish, the culinary team and C-CAP students sprinkled each dish of citrus and dates with toasted Pistachios, bright Pomegranate seeds, Molasses, fresh Mint and stunning edible flowers (a pretty surprise!). Uptown-goers gathered around the Demonstration Tent to learn more about this new local dining spot and enjoy the sample that was refreshingly light with just the right amount of tartness.
