Earlier this month we were delighted to welcome Joanie Simon, home cook and food blogger, and Michelle Jacoby, Bite Magazine Publisher, to the Demonstration Booth at Uptown! This duo was on site to promote their latest collaboration: The Kitchen Kit — a recipe box featuring 3 to 4 locally made products “ingredients” paired with a original recipe from Simon. The crowd gathered to show their support for these two local “foodies” and in excitement of seeing Joanie’s creation, made from this box’s featured local items.
This month’s kit includes McClendon’s Select Desert Blossom Honey (found at Uptown!), PB Americano’s Classic Peanut Butter (also found at Uptown!) and Zak’s Chocolate Haitian Cacao Unsweetened Cocoa Powder. What to create with these three tasty ingredients? “You can never go wrong with a no-bake cookie!”, says Simon. Joanie created a Peanut Butter & Chocolate No-Bake Cookie recipe, that begins as easily as combining the three featured local ingredients, plus shelled sunflower seeds and quick cooking oats in a bowl.
Once ingredients are combined, Joanie showed Uptown-goers how to take a piece of the large dough ball (2 tbsp. worth) and roll into a tight ball. Then, flatten into a round cookie shape and repeat until all dough is used — about 12 cookies per recipe.
To finish, Joanie sprinkled additional cocoa powder over all the cookies with a sifter; these treats can be refrigerated in an airtight container, and kept for up to 4 days. That’s it — an easy, tasty cookie without ever turning on the oven! Simon suggests these bite size cookies are great during school seasons when routines are chaotic. Packed with protein, and with just the right amount of sweetness that kids enjoy them, they can easily be pulled together for packed school lunches.
